Edge Hill Crab Cakes

Ingredients

1/2 cup milk
1 pound crabmeat
1 egg, slightly beaten
1 teaspoon dry mustard
2 teaspoons mayonnaise
1/8 teaspoon pepper
1 teaspoon Worcestershire sauce
1 teaspoon bitters
1 teaspoon chopped parsley
1 teaspoon salt
milk
cracker crumbs

Caper Sauce:
1 tablespoon butter
2 tablespoons flour
1 1/2 cups chicken broth
1/2 teaspoon salt
1/2 cup capers

Directions:

Mix all ingredients except milk and cracker crumbs. Make into cakes. Dip in milk and then in cracker crumbs. Place on lightly greased baking sheet in 375° oven for 20 minutes. Serve with Caper Sauce.

Caper Sauce:
Melt butter. Add flour and broth slowly. Add salt and capers.
