Place each piece of chicken between 2 pieces of clear plastic wrap. Working from center to edges, pound lightly with meat mallet, forming rectangles about 1/8-inch thick. Remove plastic wrap. Sprinkle each side with salt and pepper. Place one piece of cheese onto each piece of chicken, fold in sides; roll up jelly-roll style. Skewer closed with wooden picks. Roll chicken in flour, then dip in beaten eggs. Roll in fine dry bread crumbs to coat evenly.
Place chicken rolls, seam-side down, in a shallow baking dish. Bake, uncovered in 350° oven for 30 minutes.
Sauce:
In a small saucepan, combine the white wine, margarine, parsley, and oregano (or marjoram). Cook and stir over low heat until margarine is melted. Pour the sauce over chicken rolls; continue baking about 10 minutes or until tender. Remove the wooden picks before serving.
Fun Fact: Like many New Mexico churches, San Miguel Mission in Socorro has massive adobe walls, large carved vigas, and supporting corbel arches. Given extensive restorations during the 1970s, it was originally built in 1598 by Franciscan priests, making it one of the earliest established churches in the US.
