Filling:
Mix chicken, celery and hard-boiled eggs; add enough mayonnaise to moisten, and salt and pepper to taste.
Sandwich:
Mix cream cheese with enough pineapple juice to make a smooth consistency.
To assemble cake: Cut two slices of bread, using pineapple can. Butter both pieces on one side. Layer in this order: One slice of bread, buttered side up, one slice pineapple, one scoop of chicken filling, and topped with a slice of bread with buttered side down. Frost top and side of sandwich with cream cheese mixture.
To make the night before: Place sandwiches on a tray, cover with plastic wrap and a damp tea towel, refrigerate, and frost the next day.
Editor's Extra: Place a pineapple tidbit or two with mint leaves on top of each one . . . beautiful!
