Combine all ingredients except turkey in a small saucepan to make herb sauce. Simmer 3-4 minutes. (Stuff turkey, if desired, and truss as usual.) Brush generously with herb sauce. Cook in smoker according to manufacturer’s directions. One hour before cooking is finished, add damp hickory chips to smoker and baste turkey every 20 minutes with the herb sauce.
