Coconut Cake

Ingredients

1 (18 1/4-ounce) box pudding yellow cake mix
1 stick melted butter
1 (8-ounce) can cream of coconut
3 eggs
1 cup sour cream
1 cup coconut
1 (8-ounce) package cream cheese
2 teaspoons mexican vanilla extract
2 to 3 tablespoons milk, enough to make a good frosting
4 cups powdered sugar
1 cup coconut

Directions:

Mix together first 6 ingredients until blended completely and pour into greased 9 x 13-inch pan or 2 round cake pans. Bake at 350°F for about 30 minutes until toothpick comes out clean.

Beat together next 4 ingredients until smooth and then stir in coconut. Frost, serve, and enjoy.
