Crispy Herb Baked Chicken

Ingredients

2/3 cup Idaho "Spuds" instant potato flakes
1/4 cup grated Parmesan cheese
2 teaspoons dried parsley flakes
1/4 teaspoon garlic salt
1/8 teaspoon paprika
dash of pepper
3 - 3 1/2 pounds chicken, cut-up, skinned, rinsed, patted dry
1/3 cup butter or margarine, melted

Directions:

Heat oven to 375°. Grease or line with foil a 10x15-inch baking pan or a 9x13-inch pan. In medium bowl, combine dry ingredients. Stir until well mixed. Dip chicken pieces into margarine. Roll in potato flake mixture to coat. Place in greased pan. Bake at 375° for 45–60 minutes or until chicken is tender and golden brown.
