Saffron Rice

Ingredients

1/4 cup chopped onion
1/4 cup butter or margarine
1 cup uncooked rice
3 cups chicken broth or 3 chicken bouillon cubes plus 3 cups water
1 teaspoon salt
1/4 teaspoon saffron
2 tablespoons hot water
grated Parmesan cheese

Directions:

Sauté onions and butter until tender. Add uncooked rice and stir until lightly browned. Add broth and salt. Cover reduce heat and allow rice to simmer about 20 minutes, do not stir. Let stand another 20 minutes with lid on. Meanwhile, dissolve saffron in hot water stir into hot rice. Serve warm with Parmesan cheese.
