Lobster Barquettes

Ingredients

1 tablespoon finely chopped shallot
2 tablespoons butter
2 cups diced, cooked Maine lobster meat
1/2 cup cream sauce
24 oval puff pastry shells (barquettes)
1 cup whipped cream
1 cup hollandaise sauce
pinch cayenne pepper
grated Parmesan cheese to taste

Directions:

Sauté the shallots in butter until clear. Add the lobster meat and the cream sauce. Mix thoroughly and fill each barquette about 3/4 of the way. Fold whipped cream into hollandaise sauce and add a pinch of cayenne pepper. Spread over lobster mixture and dust with the grated Parmesan cheese. Place under hot broiler until sauce is bubbly and slightly browned.

Makes 24 and is a wonderful appetizer
