Sauté celery, onion, and garlic in butter for 5 minutes. Combine with bread crumbs, thyme, and salt and enough apple juice to moisten. Stuff pig and close cavity. Place piece of wood in pig’s mouth. Cover ears and tail with foil to prevent burning. Roast in a moderate oven (325°F) for 4 hours, basting frequently.
To serve, remove piece of wood and insert apple.
