Hunter’s Chicken


Serves: 6

Ingredients

1 pound boneless, skinless chicken breast, cut in strips
1/3 cup cornstarch
1/4 cup margarine
1/2 teaspoon tarragon
1/2 teaspoon thyme
1/4 teaspoon pepper
1 cup sliced green onions
2 cups chicken broth
3/4 cup white wine
1 cup sliced mushrooms
3 tomatoes, cut in eights
3 or 4 cups cooked rice

Directions:

Dredge chicken in cornstarch. Brown coated chicken in margarine. Stir in seasonings and onions. Cook a few minutes longer. Add broth and wine. Cover; simmer at least 10 minutes. Gently stir in mushrooms and tomatoes. Cover; simmer 5 minutes longer. Serve over rice.
