Season chops with salt and pepper. Heat oil in large heavy skillet until hot. Add chops for 4–5 minutes on each side, until well browned. Transfer chops to plate and set aside. Add onions to the pan and cook, stirring for 2–3 minutes, until light brown. Stir in mustard, mushrooms, and additional pepper to taste. Add cabbage and apple; season lightly with salt; cook, stirring for 1 minute. Add beer; bring to boil and cook 3–4 minutes. Return chops to skillet, burying them in the cabbage mixture. Pour broth over. Cover; simmer 40–50 minutes until chops are tender.
