Mix together olive oil, garlic, rosemary, and thyme. Season generously with salt and pepper. Spread the mixture over the lamb and let it marinate 3 hours.
Preheat oven to 300° and roast the lamb for 1 1/2 hours. Mix bread crumbs and parsley. Add sufficient meat juices to make a paste. You may need to add a little butter. Spread the paste over the lamb and bake another 30 minutes to finish cooking and to brown the crust.
