Goulash

Ingredients

2 pounds boneless beef chuck, cut in 1-inch cubes
3 tablespoons cooking oil
1 (14-ounce) can beef broth
1 cup chopped onion
1 small green pepper, chopped
2 tablespoons tomato paste
2 tablespoons paprika
2 teaspoons caraway seed
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup cold water
3 tablespoons flour
broad noodles, cooked
dairy sour cream (optional)

Directions:

In large saucepan, brown beef cubes in hot oil. Add beef broth, onion, green pepper, tomato paste, paprika, caraway seed, salt and pepper. Blend cold water into flour. Stir into beef mixture. Simmer, covered, until meat is tender, about 1 1/2 hours; stir occasionally. Serve over broad noodles. Sour cream as a garnish is optional.
