True Ireland Corned Beef and Cabbage

Ingredients

1 (3-pound) corned beef
1 teaspoon ground cloves, or to taste
1 tablespoon freshly ground pepper, or to taste
3 bay leaves
1 tablespoon dry mustard
1 (1 1/2- to 2-pound) head white cabbage, cut in 8 sections

Directions:

Place corned beef and all seasonings in large pot. Cover with water. Bring slowly to boil. Cover and simmer gently for 1 hour. After 1 hour, add cabbage. Simmer for 30 minutes. Let stand for 30 minutes.
