Keep the juices in and the cook time to a minimum for moist, tender chicken. Don't test too often for doneness, only once or twice, so the juices of the chicken stay in the chicken.
To test for doneness, use a knife to cut into the center of the thickest part of the chicken to see if the juice is no longer pink. Do not pierce the chicken with a thick, multi-tined fork or the chicken will lose an excessive amount of juices. Avoid overcooking your chicken by testing after the minimum cook time given in the recipe.
