1. Combine sugar, Five Spices, salt and pepper. Rub mixture over pork strips and let stand 2 hours

2. Add soy sauce and sherry and toss. Let stand 30 minutes more, turning frequently. Then roast (see Pork chapter, "Barbecued Pork Strips").
