1. Crush garlic and ginger root then combine with remaining ingredients.
2. Add to spareribs and marinate (see Pork, *Spareribs).
VARIATIONS:
* Rub the spareribs first with 1 teaspoon salt and 1 teaspoon sugar. Let stand 1 hour then marinate.
* Reduce the soy sauce to 3/4 cup increase the sherry to 1/4 cup.
* Reduce the sugar to 1 teaspoon and add 1/2 teaspoon Five Spices. For the sherry, substitute brandy.
* Add 2 tablespoons honey and 2 tablespoons of either hoisin sauce or applesauce.
