1. Mince garlic and ginger root then combine with remaining ingredients.
2. Rub mixture over spareribs. Let stand 1 hour then roast (see Pork, *Spareribs).
VARIATIONS:
* For the regular soy sauce, substitute 5 tablespoons light soy sauce and 1 1/2 teaspoons heavy soy sauce.
* Omit the ginger root. Substitute a second garlic clove. Add 2 tablespoons sherry and 1/2 teaspoon each of ground cinnamon, anise and cloves. Omit the pepper.
* Add 2 teaspoons brown bean sauce, mashed and 1/2 teaspoon ground cinnamon.
