Combine cheese, bacon bits and onion in a small bowl; add chiles and peppers, if desired. Sprinkle mixture equally over each tortilla. Fold tortillas in half; press lightly to seal edges. Arrange on a lightly greased baking sheet. Bake at 400 degrees for 8 to 10 minutes, until edges are lightly golden. Top with a dollop of sour cream and salsa.
Line a vintage pail with a kitchen towel, tuck in some freshly baked breadsticks and a bottle of dipping oil. Deliver to a neighbor at dinnertime.
