Arrange popcorn and nuts, if using, on a jelly-roll pan. Place in oven at 200 degrees to keep warm while preparing caramel. In a medium saucepan over medium heat, blend together butter, syrup and sugar. Cook and stir until mixture comes to a rolling boil; boil 5 minutes longer. Stir in vanilla and baking soda; continue to heat until mixture foams. Remove from heat and immediately pour caramel over popcorn, stirring until well coated. Bake for one hour at 250 degrees, stirring every 15 minutes. Remove from oven; spread on sheets of wax paper to cool. Store in an airtight container.
