Bake potatoes at 400 degrees for one hour, until tender. Slice potatoes in half lengthwise; scoop out centers and reserve for another recipe. Place potato skins on a lightly greased baking sheet. Bake at 400 degrees for 6 to 8 minutes, until crisp. Remove from oven. In a skillet over medium heat, scramble eggs in butter just until they begin to set. Add salt and pepper; remove from heat. Spoon equal amounts of eggs, cheese and bacon over each potato skin. Reduce heat to 350 degrees and bake for 10 minutes, until cheese is melted and eggs are completely set. Garnish with sour cream and chives, if desired.
Tip: Stir a spoonful of strawberry jam or orange marmalade into hot tea for extra sweetness.
