Whisk together eggs, milk, vanilla and cinnamon in a shallow bowl until well blended. Lay bread slices in mixture; let stand for several minutes until absorbed, turning once. Melt butter on a griddle over medium-high heat. Carefully add bread slices in a single layer. Cook until crusty and golden on bottom, about 2 minutes; turn and cook other side. Drizzle with syrup or sprinkle with powdered sugar, as desired.
