In a large skillet, heat reserved drippings over medium heat. Add potatoes and onions to skillet. Cook until potatoes are golden and onions are tender, about 25 minutes. Add salt and pepper to taste; stir in reserved bacon.
Tip: Top corned beef hash with a perfectly round fried egg…so pretty on a breakfast plate! Remove both ends of a clean, empty tuna can. To use, set can in a greased skillet, break an egg into it and cook to desired doneness.
