Mix together potatoes, egg and cracker crumbs; add salt and pepper to taste. Let stand for a few minutes. Heat oil or drippings in a skillet over medium heat; drop potato mixture by large spoonfuls into skillet. Cook until golden on one side; flip over and cook until golden on other side.
