Combine flour, sugar, baking powder, salt and cinnamon in a large bowl; set aside. In a separate large bowl, mix together egg, milk, butter and vanilla; add flour mixture, stirring just until blended. Stir in apples and caramels. Divide batter evenly among 12 greased muffin cups; bake at 350 degrees for 25 minutes, or until tops spring back when lightly pressed. Serve warm.
Tip: For the tenderest muffins, stir batter just until moistened…a few lumps won't matter.
