1 tablespoon yeast
1 1/2 cups water lukewarm
1/4 cup sugar
1/4 cup vegetable oil
1 teaspoon salt
2 eggs well beaten
1/8 teaspoon saffron, (optional)
4 3/4 cups flour
1 egg yolk
2 teaspoons sesame seeds
Place yeast and water in large bowl. Add sugar, oil, salt, beaten eggs, saffron, and 2 1/2 cups of the flour. Beat well. Add enough of the remaining flour to make soft dough; knead. Place in greased bowl. Cover and let rise till doubled in bulk. Punch down and divide into five pieces. Using four pieces, roll each into a long rope 18 to 20 inches long and one inch in diameter. Braid four ropes together. Cut remaining piece of dough into three pieces and roll each in a rope 8 inches long. Braid. Lay small braid on large braid. Place on cookie sheet. Brush with egg yolk mixed with 1/4 teaspoon water. Sprinkle with sesame seeds. Cover and let rise 30 minutes. Bake at 375 degrees F. about 30 to 35 minutes. Makes one braid.
