1 1/4 cups milk
1/3 cup vegetable oil
1 egg
1 teaspoon rum extract
2 1/2 cups flour
1 cup sugar
1/4 cup poppy seeds
3 teaspoons baking powder
1 teaspoon salt
1/2 cup powdered sugar
1 tablespoon lemon juice
Preheat oven to 350 degrees F. Mix milk, oil, egg, and rum flavoring together. In a separate mixing bowl, combine flour, sugar, poppy seeds, baking powder, and salt. Add liquid ingredients to dry ingredients and stir 30 seconds. Grease bottoms only of 1 large loaf pan or 2 small loaf pans. Pour batter into pan(s). Bake for 50 to 60 minutes. Loosen sides of loaf from pan; remove from pan. While still warm, drizzle with mixture of powdered sugar and lemon juice. Cool completely before slicing. Makes 1 large loaf or 2 small loaves.
