1 potato, cooked and mashed
1 tablespoon yeast
1/4 cup water lukewarm
2 tablespoons honey
2 teaspoons salt
2 tablespoons vegetable oil
3 cups whole wheat flour
3 cups flour
Peel and dice one medium potato and cover with about 3 cups water. Simmer till tender. Drain, saving 2 cups potato water. Mash potato. Dissolve yeast in 1/4 cup lukewarm water. Add potato water, mashed potato, honey, salt, oil, and 2 cups of the whole wheat flour. Beat together for five minutes. Continue adding wheat and white flour till dough can be kneaded into a smooth ball. Cover and let rise till double in bulk. Punch down and knead again about 5 to 10 minutes. Cover and let rise again. Divide dough in half, and shape into loaves. Let rise 20 to 30 minutes. Bake at 375 degrees F. for 30 minutes. Makes 2 loaves.
