3 eggs
1/3 cup brown sugar
1/2 cup vegetable oil
1/4 cup molasses
2 cups bran wheat, unprocessed
1 cup carrots, grated
1 cup bananas, mashed
1 1/2 cups apple juice
1 1/2 cups whole wheat flour
1/2 cup wheat germ untoasted
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
1/2 cup raisins
Preheat oven to 375 degrees F. In large bowl, beat eggs (or 6 egg whites). Add brown sugar, oil, molasses, bran, carrots, banana, and apple juice (or milk); stir well. In separate bowl, mix whole wheat flour, wheat germ, baking soda, baking powder, salt, and cinnamon; stir in raisins, then add all at once to egg mixture, stirring only till moistened. Spoon into muffin cups 3/4 full. Bake for 25 minutes. Makes 2 dozen muffins.
