Heat oven to 350°. Spread undrained chiles evenly in a 9-inch pie pan. Sprinkle grated cheese over chiles. Beat egg with water until blended, then spread over cheese. Bake 15–20 minutes until cheese is hot, bubbly, and lightly browned. Serve with corn chips. Hold on warming tray so cheese stays soft.
