Preheat oven to 400°. Coat an 8x8-inch baking pan with cooking spray or oil. Set aside. Beat eggs with fork in medium bowl. Add remaining ingredients and blend thoroughly, mixing by hand. Pour into prepared pan and bake approximately 20 minutes or until set. Let cool slightly and cut into squares. Serve hot or cold.
Editor's Extra: My friend made half a recipe in a small Corningware dish and it worked perfectly. This can be served as a side dish, or try doubling the recipe for a great breakfast entrée.
