1 In a large pot, cook the onion, carrot, and celery over medium heat with the olive oil until the vegetables are wilted, about 5 minutes.
2 Stir in the garlic and red pepper and cook 2 minutes more. Stir in the lentils, tomato, water, and salt to taste. Bring to a simmer. Lower the heat, and cook about 45 minutes, or until the lentils are tender. (Add more water if the lentils seem dry.)
3 While the lentils are cooking, put the sausages into a large pot with water to cover. Partially cover the pan and bring to a simmer. Cook 45 minutes or as recommended by the manufacturer.
4 Transfer the sausage to a cutting board. Cut the sausages into thick slices. Spoon the lentils onto a warm serving platter. Arrange the sausage slices on top. Serve immediately.
