Herbed Artichoke Salad

Ingredients

2 tablespoons lemon juice
2 tablespoons olive oil
1/8 teaspoon garlic powder
1 tablespoon sugar
1/4 teaspoon dried tarragon
1/4 teaspoon dried oregano
1 (15-ounce) can artichoke hearts, drained and chopped
2 cups sliced mushrooms

Directions:

Combine first 6 ingredients together in a serving bowl add artichokes and mushrooms. Toss well cover and refrigerate until serving.

TIP: Using fresh artichoke hearts for this recipe? Be sure to only use stainless steel knives and bowls to avoid discoloring them.
