In a shallow bowl, combine bread crumbs, Parmesan cheese and basil. Dip chicken into egg coat with bread crumb mixture. Brown in butter and oil over medium heat for 3 to 5 minutes on each side or until juices run clear when pierced with a fork.
TIP: Flatten chicken between wax paper using a rolling pin and a little muscle...just toss the paper and there's no mess!
