Trim chicken breasts divide and spoon stuffing evenly in the center of each chicken breast. Salt and pepper to taste. Roll and fold closed hold together with toothpicks. Heat olive oil in a skillet brown chicken breasts on both sides. Arrange in a 1-1/2 quart casserole dish bake at 375 degrees for 30 minutes. In a separate pan, heat jam and butter until melted pour over chicken breasts before serving.
TIP: Instead of serving traditional biscuits or dinner rolls with this dish, bake up some sweet and tangy cranberry muffins! Just stir frozen cranberries into cornbread muffin mix and bake as usual.
