1. Prepare ice cream, if using homemade. Put the berries in a large bowl. Add the sugar and cassis. Toss to mix, cover and refrigerate at least 4 hours or overnight.
2. Prepare whipped cream. Then, shortly before serving, put 1/4 cup sweetened berries in the bottom of each of 4 parfait or wineglasses. Spoon 1/2 cup ice cream on the berries. Add another 1/4 cup of berries and top each serving with a generous dollop of whipped cream. Garnish with mint sprigs. Serve at once.
NOTE: Berry juice will seep into the ice cream, but it still looks and tastes great.
