Skillet Scalloped Potatoes

Ingredients

6 medium-size potatoes
4 tablespoons shortening or bacon drippings
1 medium onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons light cream
1/3 cup sharp pasteurized process cheese spread

Directions:

Peel and slice potatoes thinly. Heat shortening in large skillet add potatoes, salt, and pepper. Fry over low heat until golden brown. Pour cream over mixture add cheese spread. Cover and cook slowly until potatoes are tender, about 10 minutes.
