Mix together sugar and cornstarch add boiling water and mix to a thick paste in top of double boiler cook until bubbly. Add lemon juice. Beat egg yolks add a small amount at a time and cook again until bubbly. Remove from heat add butter, lemon extract, vinegar and food coloring (optional) stir. Pour into baked pie shell. Prepare Special Meringue per directions and add to top of pie.
