Mix together cornstarch and cold water add boiling water with a pinch of salt. Cook until thickened then cool completely. Beat egg whites until stiff add sugar and vanilla. Fold cornstarch mixture into egg whites.
NOTE: The addition of the cornstarch causes the meringue to stand up better and longer.
