In medium pan (nonstick), combine rice, sugar, milk and butter. Bring to a boil. Reduce heat to low; cook 20–25 minutes or until thickened and creamy, stirring so as not to stick. Remove from heat and cool slightly. Grease an 8-inch-square baking dish.
In large bowl, beat eggs; stir in remaining pudding ingredients and rice mixture. Pour into greased pan. Bake at 350° for 55–60 minutes, until set. Serve warm with cream over each serving.
Note: May plump raisins by soaking in warm amaretto or water.
