Skin and cut up chicken. Sauté onions and mushrooms in butter. Stir in artichoke hearts. Place chicken pieces in greased casserole and cover with onion mixture. Mix together artichoke oil, sherry, flour, and soup, and pour over top. Bake at 350° for 45–60 minutes. May be prepared the night before.
Editor's Extra: To avoid lumps when mixing flour with liquid, use a whisk, or shake in a jar.
