Drain broccoli and arrange it in a baking dish. Cover with prosciutto, then turkey. Melt butter and blend in flour. Stir in the chicken broth and cream; cook, stirring constantly, until smooth and thick. Stir in cheeses, sherry, salt, and cayenne. Heat just until cheese is melted. Pour sauce over turkey; sprinkle with 1/4 cup grated Parmesan. Bake at 350° until the sauce is hot and the cheese brown and bubbly, about 30 minutes.
