Country Chicken Pie

Ingredients

4 chicken breasts halves, cooked and deboned
1 small onion, chopped
2 ribs celery, chopped
1 carrot, chopped
1 small potato, chopped
6 tablespoons butter or margarine
6 tablespoons plain flour
2 1/2 cups milk
2 chicken bouillon
1 teaspoon Worcestershire sauce
1 teaspoon salt
pepper to taste

Directions:

Boil chicken in enough water to cover until done—about one hour. When cool, remove meat from the bone and chop in bite-size pieces. Chop vegetables into small pieces and boil in a small amount of water about 10 minutes. They should be tender, but not completely done. Drain.

Make sauce by melting butter and adding flour until it is mixed. Gradually add milk, stirring constantly so the sauce will not lump. Add bouillon cubes, Worcestershire, salt, and pepper. Cook over low heat until mixture thickens. Mix chicken, vegetables, and sauce and pour into a greased 2-quart casserole. Top with biscuits rolled about 1/2 inch thick. (Any biscuit recipe will do, but a mix made according to directions will do as well.) Bake at 400° for 30–40 minutes until the casserole is bubbly and the biscuits are brown.

Note: This may be frozen but do not add the biscuits. If frozen, the cooking time will be longer, so the biscuits should be put on top the last 30 minutes of baking.
