In large bowl, mix soup, sour cream, chiles, green onions, olives, and Jack cheese. Remove 2 cups of mixture and set aside.
Add chicken to above mixture. Put 1/2 cup into each tortilla and roll up. Place in large greased casserole or 9x13x2-inch pan. Pour the reserved 2 cups mixture over top of rolled tortillas; cover with grated Cheddar cheese. Bake at 350° until hot and bubbly, approximately 35–45 minutes. Can be made ahead and frozen.
