TO MAKE THE SALAD: In a large bowl combine the salad ingredients, including half of the dill and half of the mint.
TO MAKE THE DRESSING: In a small bowl whisk together the dressing ingredients, along with the remaining dill and mint.
Pour the dressing over the salad and toss to combine. Spoon onto a deep platter, top with the crumbled cheese, and serve immediately.
