TO MAKE THE SALAD: On a large platter arrange the tomato, cucumber, and onion slices in overlapping concentric circles. Sprinkle with the basil and mint and season with salt and pepper.
TO MAKE THE DRESSING: In a small bowl whisk together the dressing ingredients.
Drizzle the dressing over the salad. Garnish with the basil leaves and a few black olives, if desired. Serve immediately.
