In a small sauté pan over medium heat, toast the sesame seeds, stirring occasionally, until golden brown, about 5 minutes.
TO MAKE THE DRESSING: In a small bowl whisk together the dressing ingredients.
Cut the cucumber in half lengthwise, then cut each half crosswise as thinly as possible. Place in a medium bowl. Cut the red onion in half through the root end. Trim the root end off the halves, then slice the halves as thinly as possible. Add the onion slices to the cucumbers. When ready to serve, pour the dressing over the vegetables. Sprinkle with the sesame seeds. Toss to coat evenly. Serve at room temperature.
