Slice angel food cake in half horizontally. Set top half of cake aside. In a small bowl, mix cream cheese and preserves, adding more or less preserves to taste. Spread all of cream cheese mixture thickly on bottom half of angel food cake. Place top half of cake on top of cream cheese mixture, fitting both cake halves together. Frost entire cake with extra creamy whipped topping (or real whipped cream, if you like!). Place pineapple rings in a pattern on top of and around sides of cake.
