Heat oil over medium-heat in heavy skillet; sauté onion. Add flour, and stir constantly till medium brown. Add tomatoes and chicken broth or water, and stir quickly. Allow to boil for about a minute, then lower heat and simmer till thickened to desired consistency. Add salt and pepper to taste, if desired.
