Prepare pudding according to package directions, using the milk. Stir in lemon zest. Spoon into mini crusts; arrange fruit on top as desired. Use a pastry brush to glaze fruit with melted jelly. Set tartlets on a baking sheet, cover and chill.
Tip: Make guests feel like kids again with charming candy napkin rings! Wrap candy necklaces around rolled napkins or cut paper strips of candy dots to fit around napkins and join the ends with tape.
